What’s Your Favourite Sushi Recipe?

Sushi lovers everywhere always have one particular sushi recipe that they love. Mine is the rainbow roll. It’s called an inside-out roll because the rice is on the outside and the seaweed, or nori, is on the inside. For the ingredients you’ll need sashimi grade tuna and sashimi grade salmon. If you’re not comfortable handling raw fish you can use limitation crab meat, known as kani kama in Japan.

You’ll also need an avocado, pickled ginger, soy sauce and Japanese cucumber. Don’t worry! You can use a regular English cucumber if you want. For a garnish, make sure you have some roasted, white sesame seeds and wasabi paste. The latter is made from the daikon radish and is very hot. Trust me! A little amount will set your mouth on fire, so please use it sparingly.

Utensils you will need include a bamboo sushi mat and plastic wrap to prevent your sushi rice from sticking.

Enjoying a Gluten Free Dessert

When I started to learn about gluten I knew it was better for my body if I stopped consuming gluten containing foods. I also thought that it meant I wouldn’t be able to enjoy food the way I always have. The truth is, like many of you, I love to eat. It is a great way to unwind or a great way to be social without having a lot of pressure. Eating can bring people together and it can open the door for some great conversations. I was thinking about going gluten free but I worried that it would mean I would lose some of the joy of eating.

I am glad to report that I was very wrong! Eating gluten free doesn’t have to be boring. In fact, I have begun putting together a list of gluten free foods, including my favorite gluten free desserts. I am surprised how long the list is! I have found that I can eat almost anything, with some slight substitutions, on a gluten free diet.
